RED VELVET CAKE

 

 

 

Ingredients:

  • 2 1/2 cups plain flour
  • 1¾ cups sugar
  • 2 cups oil
  • 1¼ teaspoons soda
  • 1 teaspoon salt
  • 2 teaspoons cocoa
  • 1 Tablespoon vinegar
  • 1 Tablespoon vanilla
  • 3 Tablespoons red food coloring
  • 2 large eggs
  • 1 cup buttermilk 

Cooking directions:

Cream sugar and oil. Add eggs and beat well. Sift together dry ingredients and add to sugar mixture alternately with buttermilk. Blend well and then add vanilla. Put into three 9 inch cake pans which have been greased and floured. Bake in 350 degree oven for about 30 minutes or until cake springs back after touched lightly with finger. Cool. 

Icing:

  • 1 stick margarine
  • 1 (8 ounce) cream cheese
  • 1 box powdered sugar
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Cream sugar, butter and cream cheese until smooth. Add vanilla and pecans. Blend and spread on cooled cake.
