PECAN CAKE

 

Ingredients:

  • 3 eggs
  • 1 cup sugar
  • 1 cup chopped pecans
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • Pinch of salt
  • 2½ cups vanilla wafers, rolled into crumbs

Cooking directions:

Beat eggs until thick; slowly add sugar. Add vanilla, pecans, and salt. Add vanilla wafer crumbs and baking powder. Line cake pan with wax paper. Grease pan and paper. Bake at 275 degrees for 25 minutes. Cool. Put layers together with whipped cream, sweetened with brown sugar and some chopped pecans. Top with whipped cream and whole pecans.
