DATE BALLS

 

Ingredients:

  • ½ cup margarine
  • ¾ cup sugar
  • 1 (8 ounce) box chopped pitted dates
  • 1 egg
  • 1 Tablespoon milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 cups crispy rice cereal
  • ½ cup chopped pecans
  • 1 cup coconut

Cooking directions:

Melt margarine, sugar and dates over low heat until it boils. Beat together egg, milk, vanilla and salt. Add to first mixture and cook for 2 minutes. When cool add cereal and pecans. Roll into bite-size balls and then roll in coconut.
