CARROT CAKE
Ingredients:
- 2 cups flour
- 1 teaspoon cinnamon
- 2 cups sugar
- 1 teaspoon salt
- 1 teaspoon soda
- 1¼ cups cooking oil
- 4 eggs
- 3 cups grated carrots
Cooking directions:
Place flour, cinnamon, sugar, soda and salt in mixing bowl and add oil, eggs and carrots. Beat until batter is smooth. Pour into 3 greased and floured cake pans. Bake at 350 degrees for 30 minutes.
Icing:
- 1 (8 ounce) package cream cheese
- 1 box powdered sugar
- 1 cup chopped pecans
- 1/2 stick oleo
- 1½ teaspoons vanilla
Beat cheese and oleo until soft. Add sugar and vanilla and beat until fluffy. Add pecans and spread on cake.
