CARROT BREAD

 

Ingredients:

  • 2 cups sugar
  • 1 cup salad oil
  • 3 eggs
  • 3 cups sifted flour
  • 2 teaspoons soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • Pinch of salt
  • 3 cups grated carrots
  • 2/3 cup chopped pecans

Cooking directions:

Mix sugar, salad oil and eggs in a large bowl. Sift together flour, soda, baking powder, cinnamon, and salt. Add to mixture and blend well. Stir in carrots and pecans. Spoon into two loaf pans (greased and floured) and bake at 350 degrees for 50-60 minutes.
